Neil Haydock is very particular about where his produce comes from. He champions locally sourced, good quality produce from small artisan suppliers when he can and supports the Cornwall Food and Drink #ChooseCornish campaign. This is because he believes the taste is so much better, but also because he gets the opportunity to build a relationship with his suppliers which is really important.
“Its a two way relationship” explains Neil, “our suppliers work with us, advise us and help us make the most from their ingredients.”
There are a few perks too. Last week Executive Chef, Neil Haydock, was invited by Angus Trotters Family Butchers, who supply the hotel with beef, pork and lamb, to join them clay pigeon shooting in Cambourne.
The day got off to a great start with Adam Stock, Head Chef of The Living Space and Carl Paparone, Head Chef of the dining doom, joining Neil for a a few rounds of clays. After an morning shooting, the boys went across the road to Lawrence’s local for a pub lunch and a deserved pint. It’s a tough life being a chef!
Angus Trotters are our local suppliers of beef, lamb and pork and have been for six years. Neil work’s with them because their knowledge of the meat they produce is second to none and the quality is outstanding, in fact you can see the cattle, sheep and pigs before you put in an order as the they are reared in the fields next to the shop.
Supporting local trade a;ways important when choosing our suppliers. We use Angus Trotters for locally supplied meat along with Matthew Stevens and Wings who supply us with Cornish seafood, other Cornsih suppliers include Kernow Sausages, Buttervilla, Roddas, Cornish Orchards, Origin Coffee and Plough to Plate.
We are conscious of the carbon footprint we produce at Watergate Bay Hotel and using Angus Trotters, and other local suppliers, significantly reduces ours considering they are based in Redruth, just outside Truro.
