We asked Emily to introduce herself and share the ethos behind her food, and to give a taste of the ‘hyper-local’ treats you can expect…

I’m delighted to be in residency with my team at Watergate Bay this summer, as a pop-up restaurant in a truly unique location, looking out over the beautiful golden sands of the Bay.

These are, of course, uncertain times, and life for many of us has not been easy lately. But I’m of the belief that many of the lifestyle changes of recent months also carry the potential for positive change. We’ve been forced into a slower, more gentle way of living. We’ve been stripping things back and keeping things simple.

When I recently held the keys for this amazing venue in my hands for the first time, I was struck by a tangible sense of hope – that as we all emerge from lockdown, we will hold a fresh appreciation of our world and what it has to offer. Perhaps we will become more connected to each other in real life, enjoying our days in a whole new way. The restaurant is the perfect chance to do that.

For me, returning to the seaside for this special one-off opportunity, the future suddenly appears full of colour, new energy and excitement. I love experiencing each season as it unfolds. And I suddenly feel lucky to be able to breathe in the summer, a time that reveals so many wonderful ingredients with which to fill my kitchen and be inspired to cook.

My ethos is always to seek quality local suppliers, and to really get to know the story behind the food, the providence of how it finds its way to the table. I’ve always been passionate about these connections between food, place and storytelling. I find them infectious, intriguing and comforting all at the same time.

My own story began with warm memories of a childhood in Provence with my grandfather, Papa, collecting strawberries from the fields to the hum of crickets in the hot sun. It then slowly winds its way through Cornish country lanes to its beautiful golden sandy beaches. I translate this experience through locally-sourced ingredients into delicious, rustic dishes that are so deceptively simple you can even recreate them at home. I hope we inspire you to try.

On the table

Seafood fresh from Cornish waters.
Peas, broad beans, fennel and courgettes with their delicate flowers.
Mozzarella – the cheese that sings summertime to me.
Risottos, crab salad with mayonnaise, sourdough bread.
Delicious seasonal salads full of fantastic herbs, kitchen garden leaves and sweet ripe tomatoes.
Beautiful sweet English strawberries, raspberries, currants, gooseberries.
All the beautiful stone fruits, such as apricots and peaches.
Plus pies, galettes and tarts and vanilla-seeded panna cotta with that perfect wobble…

Wine is a collision of history, geography and passion, and at Emily Scott we understand that a great wine list tells a captivating story, about how the grapes made it to the glass. That’s just as important to me as sourcing the best kitchen ingredients.

Opening hours
Emily Scott Food at Watergate Bay will be open from 9th July, Tuesdays to Saturdays, for lunch and supper. 12pm–2.30pm and 6.30pm–9.30pm.
